Every guide to pour-over coffee will tell you to control your water temperature. Kettles with a digital readout and a target setting cost meaningfully more than kettles without one, and the assumption in most product copy is that you obviously want the expensive kind.
Sometimes you do. Often you do not, and the money is better spent on the spout.
What temperature actually changes
Hotter water extracts faster. Push it too far and you pull out the bitter compounds along with everything else; too cool and the cup comes out sour and hollow because extraction stopped early.
The usable band is roughly 90–96 °C, and where you want to sit inside it depends on the roast. Darker roasts are more soluble and generally do better cooler. Lighter roasts — the ones that taste thin and acidic when under-extracted — want the top of the range.
So the question is not “does temperature matter”. It does. The question is whether you need a kettle to manage it for you.
The case for not paying for it
Water off the boil drops temperature quickly. Left in an open kettle, it falls through the useful range in a couple of minutes. That gives you a workable approach that costs nothing:
Boil. Wait about thirty seconds. Pour.
That lands you somewhere in the low 90s, which is fine for most coffee most of the time. If you are drinking a medium roast from the supermarket, the difference between this and a kettle set to exactly 93 °C is not something you will reliably taste.
Two conditions make it work: your kitchen is not unusually cold, and you are not chasing repeatability. If you brew one cup each morning and it is good, you do not have a problem to solve.
The case for paying for it
Temperature control earns its cost when you need the same result twice.
Light roasts. These are genuinely sensitive. Under-extract a light Ethiopian and it tastes like lemon water. The margin between good and disappointing is narrow enough that guessing gets expensive in wasted coffee.
Diagnosis. When you are trying to work out why a cup was bad, every variable you can pin down is one you can stop suspecting. If temperature is fixed, a bad cup is telling you about your grind or your pour.
Multiple people, multiple methods. A household where one person brews filter and another makes tea benefits from a device that just goes to a number.
Anything where you follow a recipe. Recipes specify temperature. Without control you are approximating one of the inputs.
The specification that matters more
If you are brewing pour-over, the spout matters more than the thermometer.
A gooseneck spout gives you a narrow, slow, steerable stream. That is what lets you wet the bed evenly, pour in controlled circles, and avoid blasting a channel straight through the middle. An ordinary kettle spout dumps water — it is built to fill a mug quickly, which is the opposite requirement.
Pouring badly through a temperature-controlled kettle produces a worse cup than pouring well through a plain gooseneck. If the budget only covers one upgrade, buy the spout.
Where this leaves you
French press, drip machine, or espresso? You do not need a temperature-controlled kettle. A press is forgiving, and a machine heats its own water. Buy an ordinary kettle.
Pour-over, medium roasts, one cup a day? Gooseneck yes, temperature control optional. The thirty-second rule will serve you well.
Pour-over with light roasts, or you want repeatability? Buy the temperature-controlled gooseneck. This is the case it exists for.
Also making tea? Green and white teas want water well below boiling, and guessing is harder there than with coffee. This tips the decision on its own.
The short version
Temperature control is a repeatability tool, not a quality tool. It does not make better coffee — it makes the same coffee again. Whether that is worth the premium depends on whether your current cups vary in ways that bother you.
If they do not, buy the gooseneck and keep the difference.
